Cocido madrileño (Spanish: [koˈθiðo maðɾiˈleɲo]; "Madrilenian stew") is a traditional chickpea-based stew associated with the Madrid region. It is most popular during the winter. Long-cooking cocidos are thought to be derived from Sephardic adafina recipes.
