The Tome fraîche (Occitan: Toma fresca) or Tomme fraîche (Formatge tomme fresc) is a hard pressed curd, slightly fermented and unsalted based on cow's milk, traditionally produced in the region of Aubrac and Cantal in Haute-Auvergne (Massif central).
